How to Cook Baby Artichokes in The Microwave Oven
This lovely purée is a nice way to introduce your baby to artichokes. Add them in small quantities to other dishes until your baby is a toddler, and old enough to enjoy them roasted or baked.

COOK TIME: 45 mins
2 globe artichokes, stems removed
1 Put the artichokes in a steamer and steam, covered, over boiling water for 45 minutes until a leaf pulled from the top comes out easily. Add extra boiling water during steaming if necessary. Remove from the heat and set aside until cool enough to handle, reserving the steam water.
2 Peel the leaves off the artichokes and reserve them to serve as an appetizer for yourself, dipped in olive oil or melted butter. Using a sharp knife, carefully cut out and discard the hairy chokes, then chop the artichoke hearts and transfer them to a blender (letting them cool completely first if using a blender with a plastic container). Add enough of the reserved steam water to cover the artichoke hearts halfway. Blend for 1 minute until smooth. Serve warm,reheating if necessary.
