Rice & Mango Breakfast
Brown rice flakes are a wonderful alternative to rolled oats. They cook more quickly than brown rice, making this delicious dish perfect for mornings when you’re pushed for time.
PREP TIME: 10 mins, plus overnight soaking
COOK TIME: 10 mins
½ cup brown rice flakes
1 teaspoon plain yogurt or kefir
1 mango, peeled, pitted, and chopped
¼ apple, peeled and grated, to serve
1 Put the rice flakes, yogurt, and ¾ cup warm water in a medium saucepan and let soak, covered, for at least 7 hours or overnight.
2 Bring to a simmer over medium heat, then reduce the heat to low and cook for 10 minutes, stirring occasionally, until the rice flakes are very soft.
3 Meanwhile, put the mango in a blender and blend for 1 minute until smooth.
Stir the puréed mango into the cereal, then sprinkle with the grated apple.
