Sweet Potato Yellow Squash Soup For Toddlers
This is a quick and easy soup that’s perfect on a crisp fall day. Kids love the
velvety texture, bright color, and gentle sweetness.

1 small butternut squash, peeled, seeded, and cubed
2 potatoes, unpeeled and diced
2 onions, chopped
2 garlic cloves, roughly chopped
⅛ teaspoon cayenne pepper
scant 2 cups vegetable stock
⅓ cup extra virgin olive oil
1 Put the squash, potatoes, onions, garlic, cayenne pepper, and vegetable stock in a large saucepan and bring to a boil over medium-high heat. Reduce the heat to medium-low and simmer, covered, for 30 minutes until the squash and potatoes are soft.
2 Using an immersion blender, purée the mixture for 1–2 minutes until creamy but still chunky. Add the olive oil and serve hot.
